Making Tuesday Tasty-Fresh Apple Cake

It's the most wonderful time of the year!!!!!!!! Ha ha. Autumn is my favorite. I love the colors, the produce, Thanksgiving, and the crispness in the air that tells me there is a reprieve from the disgusting heat that comes from this city. Here's a great take and well received recipe for fresh apple cake. Enjoy friends!

Ingredients

Honey Glaze:
1 cup confectioners' sugar
2 tablespoons honey
2 tablespoons milk
Apple Cake:
3 cups diced Granny Smith apples, about 2 apples
1 cup lightly toasted chopped walnuts
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/4 cups vegetable oil
3 eggs

Directions

Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.

Cake: Preheat the oven to 325 degrees F. Lightly grease a Bundt pan or tube pan.

In a bowl, mix together the apples, walnuts, vanilla, and cinnamon. In a separate bowl, sift together the flour, baking soda, and salt.

Using an electric mixer beat the sugar, oil, and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.

Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean.

Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate.

Drizzle the apple cake with some of the honey glaze, serve and enjoy!

Making Tuesday Tasty-Easy Peasy Apple Pie


Apple season is in full swing! I just got a 30lb box of Honey crisp apples and wanted to make some apple pie filling to put up in the freezer. I may end up making some baked apples or apples and cinnamon as well. YUM!



This is from my Grandma's apple pie which is easy in and of itself but, if you're like me and haven't perfected making crust, you can make it this way and it turns out wonderfully.



Peel and slice enough apples to fill a 9 in pie pan. About 4 large apples. Adjust to the size and type of your apple. I measure using the pan itself.



Put apple slices in a large bowl and add



1 Tbsp of flour or cornstarch to thicken the juices while cooking



Depending on how tart your apples are, 1/2 to 1 C of white sugar(honestly, I do this to taste. The honey crisp have a lovely tartness so I put about 3/4 C of sugar)



Cinnamon to taste. I LOVE it to have a lot of cinnamon so I probably put a couple of tsp. of cinnamon in mine. If you like it less, add a little at a time and taste it.



Pillsbury ready made pie crusts(you can find these in the fridge section. comes with two crusts)



Follow the directions for the crust and unroll a bottom layer of crust into the pan.



Put filling into the pie shell.



Place the second crust over the top. Seal the edges with a fork.

If you're able to pinch the edges together, that works well too!



Cut some diagonal openings into the top crust to allow air and bubbles room for cooking.



Bake at 400 degrees for 15 to 20 Min's, then turn the temp down to 350 degrees and bake for the rest of the time to total and hour. 40 to 45 Min's.



Cool and serve.

Making Tuesday Tasty-Raw Apple Cake


This recipe was my great-grandma's recipe. A few years ago, my Grandma gave me a recipe box with some family recipe's in it. I love apple and spice cakes so this one is a goody.


Raw Apple Cake


4 C apples sliced(your favorite)

2 C sugar

2 eggs beaten slightly

2 tsp vanilla

1/2 C vegetable oil(I use canola)


Mix all ingredients thoroughly


Dry ingredients


2 C flour

2 tsp baking soda

2 tsp cinnamon

1 tsp salt


Add to apple mixture and mix. If you like, add 1 C raisins and 1 cup chopped nuts.


Put in greased and floured loaf pan. Bake at 350 for 35 to 40 min's.

Making Tuesday Tasty-Caramel Apples


It's that time of year again. Fall! There's so many lovely recipes and tried and true recipes. This one is courtesy of Food Network and uses fun orange and black sprinkles for Halloween.

Ingredients

Orange and black candy sprinkles, or candy corns

2 (14-ounce) package caramels

1/4 cup heavy cream

8 Granny Smith apples, washed and dried

8 popsicle sticks

Directions


Arrange the sprinkles or candy corns on separate plates and set aside.

Heat the caramels and heavy cream in a medium saucepan over medium heat, stirring occasionally, until melted. Turn the heat down to low.

Skewer the apples with the popsicle sticks. Working in batches, dip the apples into the caramel, coating them completely and letting any excess caramel drop back into the saucepan.

Dip or roll the apples in the sprinkles or candy corns and stand them up on a wax paper-lined baking sheet to cool.
Serve
