Wordless Wednesday-My Mom

My Mother passed away on July 19, 2009 at the age of 56 due to complications of liver disease. She only met my daughter once, when she was 3 months old. I'm so sad that she will never get to be a grandma to my daughter and any other children I may have. Both of my parents are gone now, it's hard to even think about. I love you mom and I miss you already!

With A Heavy Heart

To all my friends that read and the companies that I work with closely, I apologize for not being on here more the last few weeks. My husband and I are trying to close on our home and have been in the middle of moving and extensions to deadlines.

Sunday, July, 19, my Mother passed away of natural causes and it was unexpected. I've only just returned from a different state and I'm trying to get my bearings. Thanks to you all for having patience with me, and soon I will be up and running again.

Freaky Friday-Survival Story

I'm posting this because I've often wondered if shows like Man Vs. Wild and Survivor would help people in the midst of their own attempt of survival. Recently a young boy did just that. He was lost in Utah's Ashley National Forest after being separated from his family. The boy, Grayson Wynne, says he was helped through his ordeal by himself with the help of the show Man Vs. Wild.

Grayson says he tore up pieces of his raincoat and tying them to trees. He said he tore so many pieces he couldn't count. He left himself a way to find his way back and for people to find him. He followed the creek, left a granola bar wrapper, and a backpack as well for clues.
Two people on horseback found him in a field while he was trying to wave down a helicopter.

Thank goodness for him being returned safely, and educational television!

Green To Grow Review

As a parent, who both breastfed and gave bottles periodically for convenience, I was happily surprised to read the descriptions of Green To Grow's bottles and nipples. I had no idea really that the bottles I used, when my daughter was an infant were so toxic until a report was released about them. I felt really guilty that I had exposed her to BPA and a few other chemicals found in the plastic her bottles were made of.

Green To Grow's bottles are tested in the U.S. to ensure they meet the highest standards for quality and safety, are free of lead and PVC , include a Beginner (slow flow, 0-3 months)nitrosamine-free silicone nipple, are compatible with Medela breast pump, come in 100% recycled packaging, and are dishwasher safe (top rack). They are made from PES plastic(polyethersulfone) which has been tested extensively and found to be less porous and less reactive than other materials, PES remains dimensionally stable over a wide range of temperatures, is resistant to most chemicals, and can withstand repeated sterilization.

Green To Grow offers baby bottles in 5 oz. size and 10 oz. size. They offer a wide and standard nipple in non toxic silicone. They also carry reusable totes and reusable baby cloths for all of your baby care needs. My favorite is the Welcome Home Set they offer that contains:

•2 5 oz regular neck bottles
•2 10 oz regular neck bottles
•1 package of intermediate regular neck nipples
(3 – 6 months)
•1 package of expert regular neck nipples (6+ months)
•1 organic cotton baby cloth (colors vary)

Making Tuesday Tasty-Strawberry Shortcake

Since most of my belongings are in storage right now, I thought I would pull a recipe off the Internet that closely follows one I grew up eating. I grew up in Oregon, and the Northwest is known for it's great produce. I was in love with all things berry and basically most of the fruits grown there. My grandma always made her strawberry shortcake with Bisquick style biscuits. I loved them because they had a slightly salty taste which really brought out the sweetness of the strawberries. I also loved them because they would soak up that great berry juice! This has Summer written all over it!

Strawberry Shortcake Recipe
Print Options Print (no photos)Print (with photos)
Ingredients
Strawberries and whipping cream:

3 baskets of fresh strawberries
1/2 cup sugar
Whipping cream
Vanilla

Method
Remove the stems from the strawberries. Slice into thin (1/4" to 1/8") slices. Put into a large bowl. Add 1/4 cup to 1/2 cup of sugar (depending on how sweet the strawberries are to begin with) and mix into the strawberries. Set aside at room temperature to macerate (which means that the sugar will soften the strawberries and help release their juices).

After the strawberries have been sitting for 20 minutes or so, take a potato masher and mash them a little. Not too much, just enough to get more juice out of them.

Whip the cream, adding a drop or two of vanilla and a teaspoon of sugar.

To serve, break up one biscuit per person into big pieces into a bowl. Ladle strawberries over the biscuit. Add a dollop of whipped cream.

Bisquick biscuits:

2 1/3 cups Bisquick baking mix
3 Tbsp butter, melted
1/2 cup milk
3 Tbsp sugar

The strawberry shortcake biscuit recipe used to be on the side of the Bisquick box. For some unfathomable reason, the company has started to print the recipe on the inside of the box. Talk about not understanding your customers! If you can't find the recipe, here it is:

Heat oven to 425°F. Stir baking mix, melted butter, milk, and 3 Tbsp of sugar in a mixing bowl until soft dough forms. Drop by 6 spoonfuls on to a greased cookie sheet. Bake 10-12 minutes or until golden brown.

Makes 6 biscuits.

Gluten-free biscuits:

1-1/2 cups Gluten Free All Purpose Baking Flour (Bob's Red Mill)
1 Tbsp. Sugar
2 tsp. Baking Powder
1/4 tsp. Baking Soda
1 tsp. Xanthan Gum
1 tsp. Guar Gum
1/2 tsp. Salt

1/4 cup Shortening
1/2 cup Milk
1 large Egg White

Preheat oven to 350º. Line baking sheet with parchment paper or grease lightly.

In food processor, pulse dry ingredients (flour through salt) with shortening until mixture is consistency of small peas. Add milk and egg white. Blend until dough forms ball, scraping down sides with spatula, if necessary. Dough will be somewhat soft.

Place dough on parchment-lined or greased baking sheet that’s been lightly dusted with rice flour. Gently pat to 3/4-inch thick circle with hands or spatula. Lightly dust dough with rice flour. Cut into ten 2-inch circles with floured biscuit cutter. Shape remaining dough to 3/4-inch thick and cut again. If dough is sticky, lightly dust with more flour. Arrange evenly on baking sheet.

Bake 12-15 minutes or until nicely browned. Best when served warm or gently reheated in microwave oven. Serves 10. (Recipe from Bob's Red Mill)
